Reports to: Retail Manager
Direct Reports: Kitchen Porter and Assistant Chef
Contract: Full Time
Purpose of role: To lead the operation of the kitchen, ensuring quality, consistent food delivery and working to maximise revenue and control expenditure to deliver profit.
Roles and Responsibilities:
Menu and food quality control
• Ensure dishes are presented in line with specs
• Ensure systems are in place in your absence to ensure consistent delivery of food and menu
• Work with GM to analyse sales and make recommendation based on sales trend and feedback

• Ensure ordering is monitored and controlled to deliver optimal GP
• Manage waste and over ordering to optimize GP
• Monitor weekly spend and keep in line with varying levels of custom
• Exercise portion control in line with detailed specs to optimize profit
• Ensure rotation procedures are in place to avoid wastage and losses
• Ensure all purchasing is in line with company policy and no purchasing is completed with unapproved suppliers
Monitor and manage wage spend to keep in line with budget and operate as an efficient kitchen.

• Responsible for assisting with recruitment of whole team
• Develop team to ensure consistent performance in your absence
• Follow company disciplinary procedure to deal with any personnel issues which may arise
• Ensure all staff are issued with complete starter pack, including contract and right to work documents

Health and Safety
• Ensure completion of daily kitchen records
• Fully responsible for management of cleanliness of kitchen
• To work with health and safety advisor to achieve 5* EHO audits
• Responsible for all staff training to ensure they are fully compliant with health and safety policies in place
• Ensure all staff are trained on all risk assessments
• Work with health and safety consultant on any issues which arise and involve the public
• Ensure allergen information is readily available for all dishes
• Ensure action is taken to correct any issues highlighted by health and safety consultants
