Sous Chef Lamberhurst £20,000 - £23,000 (negotiable) The Company: This is a fantastic opportunity to join an award winning company set in an area of outstanding natural beauty, in the heart of the High Weald covering over 800 acres. There is a great range of leisure and recreational activities available, including fishing, cycling and boating, on and around the reservoir with a centre, conference venue, restaurant and cafe on the shoreline. Role Purpose: - To assist the Head Chef in managing the preparation and production of a high quality food service to the restaurant and cafe restaurant. - To provide creative flair and innovation to menu design and food presentation. - To deputise for the Head Chef in his absence. - To work alongside the Head Chef to lead, motivate and develop the kitchen team. - To work in partnership with Front of House, Sales and Reservations and Food Service to provide a fully integrated and customer led catering service. Key Responsibilities: - To ensure that the kitchen operation is run to the agreed standards of service of delivery and remains within set income and expenditure targets. - To manage production and presentation of dishes and to contribute to ensuring consistent menu balance, taste, texture, colour, flair and innovation. - To liaise with F & B Manager and Head Chef regarding the choice, standard and presentation of dishes offered and to strive to ensure that menus meet with changing customer requirements. Experience: - Creative flair and high standards of a la carte and carvery style food presentation. - Food stock control - Demonstrate HACCP experience and understanding. Qualifications: Essential: - City and Guilds 706 - 1 and 2 or equivalent qualification or experience working at this level. - Intermediate Hood Hygiene Certificate.
