We are currently looking for an inspirational leader who is people focused to join us as General Manager for our venue in London's Borough Market, Rabot 1745 (Café, Bar & Restaurant). The General Manager is responsible for the operational and financial performance of the site through a high performing team. Rabot 1745 brings to Londoners the cocoa-centric cuisine of its hugely successful sibling, the Boucan Restaurant, launched in Saint Lucia in 2011. A unique restaurant and bar, with a terrace overlooking the bustling Borough Market, Rabot 1745 has the rough-and-polished elegance of a cocoa plantation house in the heart of London, featuring authentic touches. As well as a range of inventive cocktails, Rabot 1745 offers a delicious menu featuring contemporary dishes that draw on the best culinary traditions of the Caribbean, West Indies, and Britain, using roasted cocoa as a subtle savoury spice. Your role will incorporate: Delivering and exceeding financial targets Maximising profitability through sales, marketing and promotional activities Optimising contribution through controlling all costs – labour, food and variables Developing a high performing team Creating a performance culture throughout the venue Ensuring all team members are fully trained to deliver exceptional service and standards Leading, inspiring, motivating and supporting the team and setting them up for success through developing their capabilities and helping them to reach their goals Ensuring the management team understand how their role contributes to the success of the restaurant, café, bar and retail Responsibility for reinforcing the concept to customers and the unique experience of Rabot 1745 Ensuring that the highest quality service is consistently delivered to our customers and this is reflected in their experience and the reviews Clearly defining and implementing operational procedures and ensuring they are followed throughout the venue Your Key Attributes: Currently working within a similar role in hospitality Good knowledge of food and beverage Experience of running and operation of comparable size and complexity Strong leadership skills and proven ability of motivating high performing teams Effective communication skills across all levels Commercially astute with the understanding of what drives business Ability to constantly look for ways to improve and drive the business and teams forward An appetite for success and setting and demanding high standards Zealous and energetic in line with the Hotel Chocolat brand and values An ambassador for Hotel Chocolat Basic Food Safety and Health and Safety certification Good knowledge of hygiene, health and safety and licensing regulations Working knowledge of industry tools and systems e.g. Open Table, Trevalis/Micros, FnB Manager etc People who work at Hotel Chocolat are passionate about what we do, and we all strive to deliver in line with our company values; Authenticity, Originality and Ethics.
